Google Doodle spotlights Mexican dish Chilaquiles

On May 23, UPI reported that Thursday's Google Doodle highlights chilaquiles, a popular Mexican dish made with tortillas. The first widely published recipe for this beloved breakfast and brunch staple appeared 62 years ago.

According to Google's website, the word "chilaquiles" originates from the Aztec language Nahuatl, meaning "chilis and greens." Due to the abundance of corn in North America, people sought ways to repurpose stale tortillas. They discovered a delicious method by frying the tortillas into strips and sautéing them in salsa. Over time, the dish evolved to include garnishes like cream, queso fresco, onions, and avocados.


The Google Doodle features animated artwork of the meal with a fried egg on top, surrounded by peppers. The word "Google" is creatively depicted with tortilla strips, where the "Os" are represented by the egg yolk and a red onion.
